Crafted through a two-stage fermentation process, Blueberry Bark is one of our signature sauces! Tart blueberry meets citrus laced fire in this electric blend of yellow chili and jalapeño peppers. Lime juice adds brightness, while koji rice and cooked oyster mushrooms create a rich, savory base. Balanced with garlic, onion, and a splash of our signature mushroom garum. This sauce finishes with a burst of cardamom, black lime, and coriander. Perfect to add to a marinade, rice, barbecue, or just eat it with some chips! This sauce is a nice medium, 4/10 spice level!
koji enzymes and live probiotic cultures unlock deep umami and vibrant heat. The first stage of fermentation breaks down natural sugars and proteins using koji, creating a rich foundation. In the second stage, beneficial bacteria take over, developing complex tang and a bright, layered flavor.
