Crafted through a two-stage fermentation process, Zest Hound is bright, bold, and deeply layered, this vibrant sauce blends the fruity heat of Manzano peppers and red jalapeño peppers with tangy passion fruit. Blood orange juice adds a citrusy lift, while koji rice and slow-cooked oyster mushrooms deepen the umami. For exceptional complexity, this sauce is fermented and rounded with a house-made mushroom garum. This sauce may be our most bingeable sauces, we love to eat it with tortilla or pita chips, on tacos, with grilled vegetable or on fish or chicken. This sauce is a nice mild, 4/10 spice level!
koji enzymes and live probiotic cultures unlock deep umami and vibrant heat. The first stage of fermentation breaks down natural sugars and proteins using koji, creating a rich foundation. In the second stage, beneficial bacteria take over, developing complex tang and a bright, layered flavor.
