Crafted through a two-stage fermentation process, Satrinari Sriracha is the result of an awesome collaboration blending unique santa rosa plums from Satrinari Farms and our signature dual fermentation. Using fresno chilis, Lime, shiitake mushrooms, garlic, onion, spices and enhanced with our unique pre-fermentation using koji rice and mushroom garum to create a one-of-a-kind sweet umami flavor! We then use lactobacillus fermentation to give our sauces an addictive mouthwatering sour tang! This sauce is a nice med, 6/10 spice level!
This small-batch hot sauce harnesses the power of koji enzymes and live probiotic cultures to unlock deep umami and vibrant heat. The first stage of fermentation breaks down natural sugars and proteins using koji, creating a rich foundation. In the second stage, beneficial bacteria take over, developing complex tang and a bright, layered flavor.
